A drop of Burtuqa, chef Benedetto Buccheri and a WOW dish

We are pleased and enthusiastic that one of our products is participating and being used for the creation of a dish created by the well-known chef Benedetto Buccheri. The latter is chef and owner of the equally well-known Bebop restaurant, included in the Michelin Guide in 2022.

We can see the recipe from an excerpt from Gaia Guarino’s interview “Benedetto Buccheri, quel sogno in cucina diventato realtà.” for the Sicilian Secret blog on February 28, 2023:

“Q: Can you tell us some curiosities about one of the latest creations by Benedetto Buccheri?

A: One of the last dishes, certainly among the most requested by customers, is the ‘Matured tuna, Rianata sauce and drops of Burtuqa’: the tuna meat is processed like raw ham and matured until the desired texture. Once ready and portioned, it is lacquered with a Rianata sauce broken down into its ingredients (roasted tomato, Sicilian pecorino, Nubia garlic, anchovies).

Once plated, it is flavored with a spray of Palermo orange liqueur, Burtuqa to be precise. This dish has everything: study, application of technique, time and Sicilian nature.

In general, when a new recipe is born, if when we taste it we find the ‘WOW’, then the dish becomes part of the menu.”

We are proud of the application of Burtuqa in the culinary field, especially if it is used to represent the sensation and taste of Sicily in a dish.
